The waste product of electrons and pyruvate combining in fermentation is lactic acid or ethanol, depending on the type of fermentation.

In lactic acid fermentation, pyruvate (a three-carbon molecule) is broken down into lactic acid, which is then used to produce energy. This type of fermentation occurs in muscle cells when oxygen is not readily available.

In ethanol fermentation, pyruvate is broken down into ethanol and carbon dioxide. This type of fermentation occurs in yeast and certain bacteria, and is used in the production of alcoholic beverages such as beer and wine.

Both fermentation processes happen in the absence of oxygen, therefore it is called anaerobic fermentation. They allow the organism to produce energy through the conversion of pyruvate to lactic acid or ethanol and carbon dioxide.
