When you exercise, you're getting endorphins and a boost of oxygen, and of course it makes the body feel alive and great. When you don't get that feeling, well, you miss it, and so does your body once it gets used to that level of fitness and activity. When elite athletes suffer down time from injuries, the absence of activity and the chemicals that are generated through exercise can often make them feel depressed or even angry....very common. When I was down for various broken bones a few times, I went through the same thing for a week or two each time. Lots of people get that "gotta ride, gotta move, gotta DO something" feeling after just a day of not exercising. Not weird at all.
The soreness might just be overuse/overtraining. Riding so much, you really need to be careful to get good nutrition, plenty of calories, and enough rest to help your body recover and rebuild every night. Poor nutrition and especially alcohol will make it tough to recover and feel good. Also, hydration is super important. Even very mild dehydration can reduce your power output drastically, and it makes recovery take much longer. Of course your body will wake up and react to what you want it to do, even if it grumbles about it at first, but it sounds like you need to manage things a little differently if possible. Might be sure that your bike fit is ideal for you, too, and possibly using slightly easier gearing could help a bit. ]
