Stirring helps advance the uniformity of the solution in a way that would not occur as quickly if the solute and solvent were simply introduced and left alone. In the case of sugar and water the sugar and sugar and water solution is heavier than water alone. Pouring water on top of sugar in a beaker would result in the water and sugar staying the same, largely with a small layer between the substances that would dissolve slightly at the interface. Stirring helps increase the rate of dissolution in the following ways: Stirring the mixture would increase the diffusion rate and thus the dissolution rate. If a solution is a homogenous mixture, the physical act of stirring the two compounds together forces the homogenization process to happen more quickly. Stirring would also increase the sugar or solute's access to the solvent's surface area and prevent solution saturation from impeding any further dissolution at the bottom. The rate of diffusion in and out of the sugar layer is slow. Stirring helps that the total surface area of sugar is in contact with the solvent and carries the fully saturated solution away from the sugar molecule in order to provide not dissolved sugar the access to the water it needs to dissolve. ] (More)
