The enzyme alpha-amylase in saliva begins the process of breaking carbohydrates into the simple sugars the body can use. MOVEMENT Movement is an important digestive function that begins in the mouth. The tongue rolls food particles together and propels them toward the esophagus. This triggers the action of swallowing.
